Prep time: 45 minutes
Bake time: 20 – 30 minutes (depending on pan size)
Serves: 4 – 6 pax
1/2 cup peanut butter
1/2 cup cooked & mashed sweet potato
1/4 cup unsweetened cocoa
1 tsp vanilla extract
1/2 tsp baking soda
3 tsp honey
1 egg & (optional semi-sweet chocolate chips)
1. Preheat oven to 176 C
2. Melt peanut butter in microwave, mix or blend everything
3. Stir in chocolate chips last.
4. Bake in any greased pan for 20-30 mins (depending on size, larger pan shorter bake time & vice versa)
Notes: Add in almond milk if batter is too dry. Top with cottage cheese, shaved dark chocolate & a cherry on top!
